Peruvian Cuisine June 2

Cuisine wise, today was a difficult. It was fast Sunday which meant food was constantly on my mind. To pass the time until dinner we went to church and.... MUSEO LARCO!!!

 It was really a beautiful place and I learned to much about the Inca's!

Yes that is pure gold :) It was so fun to spend time with my family during our last Sunday here.

When we got home I was so glad I got to sink my teeth into this...

Locro
Fry onion, aji molido, ajo molido, and one diced tomato. When translucent add two pounds squash, corn, potatoes, and peas that have already been cooked. Wait to boil and add diced cilantro and cheese chunks.

Next up one of the most famous Peruvian dishes that displays not green eggs and ham but green chicken and rice.

Arroz con Pollo
Fry chicken and with a little salt and until just hardening and put aside on a plate. Fry onion, aji molido, ajo molido and fry the chicken. After add enough water to cover the chicken. Next add (1/2) one bunch cilantro puree, carrots, peas, chicken bullion and boil until the chicken is cooked. Add the water from the chicken in a rice cooker and prepare rice as you would normally only adding the rest of the cilantro puree (If more water is need add). Serve with chicken on top.
